Step 1a. Wash the meat put in a pot with oxtail powder and water to just cover meat to boil for 35 minutes on high heat (pressure cook for shorter time) then remove meat from water and set aside..*Note do not throw out water.
Step1b. In a pan add 1 cup of water to Steam the fish with a ½ teaspoon of salt for 10 Minutes on high heat. Remove fish, debone it and set aside..*Note do not throw out water.
Step 1c. Wash and clean crab and set aside
Step 2a. In a medium pot add 1½ cups of water and place on high heat. Using a strainer, rinse rice until water runs clear, then on medium to high heat boil rice, cover pot to steam heat medium to low, at the 10 minutes mark scoop and flip the rice all around from middle to outwards cover for another 5 minutes…low heat fluff rice and complete.
Step 2b. While rice is cooking food process or cut up contents of Label A and set aside…*Note leave ½ of onion for later in the process, also food process okra separate and set aside.
Step 3. Combine both water from step 1a & b along with ½ can of coconut milk on high heat and bring to a boil. Next add in cassava leaves cover pot on high heat, at the 10-15 minute mark add 3 tablespoon of peanut butter, mix and stir, cook for another 5 Minutes making sure peanut is desolved with pot half cover. Next add in meat, fish crab and seasoning powder cook for another 5-10 minutes (stirring to prevent sticking)
Step 4. Monitor pot for when the sauce starts to jump out of pot, at that time add crushed okra, next, chop up the ½ onion from step 2b, lowering heat to medium to low for another 7 minutes. At 7 min mark reduce heat to minimum for another 3 minutes, then add ⅓ cup of oil and stir let simmer for another 5 minutes.
Plateing: Serve top on rice or trux
