Step 1. Using a medium pot put two cups of water to boil on high heat, while the water is on, food process or chop up onion, cilantro, garlic the contents, slice up the okra separately if using for processor.
Step 2. Bring the heat to medium then insert the spinach into the water, then add the contents from step 1, along with dried shrimp, cover the pot and cook for 10 minutes. At the 10 minutes mark stir simmer for another 5 minutes on low heat.
Step 3. While step 2 is cooking, in a medium pot add 2½ cups of water add salt and place on high heat. Using a strainer, rinse rice until water runs clear, then on medium to high heat boil rice, cover pot to steam… heat medium to low, at 10 minutes mark scoop and flip the rice all around from middle to outwards cover for another 5 minutes…low heat fluff rice and complete.
Plateing: simply top rice with sauce.
