Ingredients: onions, cilantro, garlic, permento pepper, seasoning powders, salt, peanut butter, tomato, tomato paste and (choice of meat: chicken/beef/oxtail/lamb)

Step 1. Use a food processor or minced chop together the onions, cilantro, garlic, and permento pepper.

Wash meat then massage ½ of processed/chopped seasoning into meat *Note: keep other ½ of seasoning for step 2.

Step 2. Sauce Base: in a bowl add ½ cup of water and crush the tomato in it, tomato paste the other ½ of seasoning mix, and seasoning powder.

Step 3a. Start cooking the meat: In a pot, heat about ¼ cup of oil and add meat, stir to brown, add ½ cup water cover and cook for 20 minutes.

Step 3b. In a medium pot add 1½ cups of water and place on high heat. Using a strainer, rinse rice until water runs clear, then on medium to high heat boil rice, cover pot to Steam heat medium to low, at 10 minutes mark scoop and flip the rice all around from middle to outwards cover for another 5 minutes…low heat fluff rice and complete.

Step 4. Add sauce base from step 2 to step 3a pot stir in and continue cooking for another 10 minutes.

Step 5. Prepare Peanut Mix: In a bowl place peanut butter then gradually add hot water, stirring until it becomes to a smooth, pourable consistency.

Step 6. Pour the peanut mix in pot stir cook for another 10 minutes until sauce starts thicken. *Note: stir every few minutes from bottom to prevent sticking. Low stove top to low position, simmer for another 5 minutes.

Plateing: Top rice with sauce or trux.
