Ingredients: Attiéké, onion, garlic, seasoning powder, sweet pepper, hot pepper, plantain, rice, fish.

Step 1. Slice the onion, green/red pepper, plantain and dice the garlic then keep aside for later on in the process.

Step 2a. Microwave method: (If still frozen Attiéké can go directly in the microwave) (first round) In a bowl place the Attiéké for in the microwave for 5 minutes next, break up and spread apart Attiéké. Add ½ cup of water and run microwave for another 3 minutes, then sprinkle seasoning powder and mix until fluffed, not binding…(repeat of necessary).

Step 2b Steam method: In a pot boil water then reduce to medium, place Attiéké preferably wrapped in a cloth, then place in a rice strainer or similar (air passing through) then place strainer over pot of hot water. Using a fork spread and turn the Attiéké until fluffy and not binding, transfer to a bowl add seasoning powder and mix thoroughly.

Step 3. Prepare the fish: In a frying pan heat ½ to 1 cup of oil on Hi, then carefully add the fish, fry fish on both sides for 5-7 minutes (remove the fish and set aside) do not discard the oil.

Step 4. In the same oil fry the plantain both side brown, then rest of the contents from step 1, starting with the garlic for 2 minutes, then add mustard with the rest, mix well and cover for another 5 minutes medium heat…option to add hot pepper here or at plateing.

Plateing: Top Attiéké with onion and spread a some oil around plate then add the fish.
